My stew cooked all day and isn't done. I refridgerated 1 day, & if I cook it all day today, will it be ok?

I originally cooked it from 8am-7pm on low, then from 7-9pm on high, but the meat was still pinkish and the veggies weren't quite done. The next day was a fasting day, so I put the stew in the fridge and I'm cooking it again today on low, from about 6am-5:30. Will it be safe to eat?
